240mm Kiritsuke Knife Blank
Every catalogue needs one blade that stops people, and in a Japanese-style lineup that job has always belonged to the kiritsuke. The shape began as the knife a head chef carried — it signalled rank before it cut anything. The modern double-bevel version has dropped the ceremony and kept the presence. Set one in a display beside four other knives and watch which one gets picked up first.

That presence is most of what you’re buying. The rest is a blade that arrives hardened, ground, straightened and sharpened, needing a handle and nothing else.
