San-Mai composite steel ensures the thin edge holds up through repetitive high-volume vegetable prep. At 174g it’s the heaviest knife in the series — that weight works in your favor, letting gravity do the work on dense root vegetables.
The Handle: The signature 135mm ebony wood and turquoise handle completes the balance — substantial enough to match the wider blade without feeling top-heavy.
