The honesuki is a specialist — designed specifically for breaking down poultry, trimming joints, and working close to bone. The 5.9″ honesuki brings San-Mai Ebony Series quality to one of the most demanding tasks in any professional kitchen.

The Blade: The 150mm blade is built for the stiffness and control needed to navigate joints and follow bone contours cleanly. San-Mai composite steel construction means the edge holds even through the stress of repetitive boning work. At 59+/- HRC and 39mm wide, it’s narrow enough to maneuver precisely without flex.

The Handle: The same ebony wood and turquoise handle as the rest of the series. The 135mm length and 111g total weight give excellent control during the detailed, directional cuts that honesuki work demands.
