The santoku is the everyday workhorse of the professional kitchen — balanced, responsive, and built for speed across meat, fish, and vegetables. The 180mm santoku brings the same San-Mai Ebony Series craftsmanship to a shorter, faster blade format.

The Blade: The 180mm blade uses San-Mai composite steel — hard cutting core, clad on both sides for toughness and edge retention. At 59+/- HRC and 2.0mm thick, it sharpens quickly and holds that edge through heavy daily use. The 48mm blade width gives excellent knuckle clearance with a natural rocking motion on the board.
The Handle: The same signature ebony wood and turquoise mosaic handle as the rest of the San-Mai Ebony Series. At 135mm it balances the lighter 148g weight perfectly — one of the most comfortable santoku knives for extended prep.
