The kiritsuke is the knife of the head chef — long, flat, and precise. Our kiritsuke 210mm brings that prestige to your customers with a build that speaks for itself.
The Blade: The 210mm blade is forged from San-Mai (3-layer) composite steel — a hard cutting core clad on both sides for strength, flexibility, and edge retention. At 59± HRC hardness and 2.0mm thickness, it holds a sharp edge through heavy daily prep without chipping.
The Handle: The ebony wood and turquoise mosaic handle is the statement piece. Deep black grain contrasted with a turquoise inlay — functional, balanced at 135mm, and visually premium. For buyers who want alternatives, we also offer olive wood, rosewood, and pakka wood handles on custom orders.
